No time to make breakfast? No problem! Here are some easy delicious breakfast recipes that can be made in advance.
Steel cut oatmeal
Why stand in front of the stove for 40 minutes when you can spend just 5 minutes the night before and enjoy a hearty delicious breakfast in the morning.
Ingredients (makes 4 servings):
- 1 cup steel cut oats (do not use rolled oats)
- 3 cups water
- pinch of salt
Instructions:
- Bring water to boiling
- Add pinch of salt, oats and stir for 1 minute (optionally toast oats with 1 tsp butter in a pan prior to adding to water)
- Remove from heat, cover and let stand overnight
- In the morning, remove 1/4 of the oatmeal, reheat with milk of your choice or water and top with your favorite toppings.
My go to is to add a teaspoon of chia seeds, raisins and a small mashed banana for sweetness while reheating. Top with berries or have them on a side.
Store leftovers in the refrigerator, or portion out and freeze in airtight containers.
Breakfast egg muffins
Love eggs for breakfast, but have no time to whip up your favorite omelet? Try these easy grab and go muffins.
Ingredients:
- cooking spray
- 12 eggs
- salt and pepper to taste
- 2 tablespoons finely chopped onion
- 1 cup cooked chopped spinach excess water removed
- 2/3 cup shredded cheddar cheese
- 8-12 cherry tomatoes halved or quartered depending on size
- 2/3 cup crumbled cooked bacon (optional)
Instructions:
- Preheat the oven to 350°F | 180°C.
- Coat 12 cups of a muffin tin with cooking spray or line with paper liners.
- In a large bowl, whisk together eggs and onion. Season with salt and pepper, to taste.
- Add the spinach, cheese and bacon (optional) to the egg mixture and stir to combine.
- Divide the egg mixture evenly among the muffin cups (3/4 of the way up).
- Divide the tomatoes among the muffin cups
- Bake for 15-18 minutes or until eggs are set.
Let cool slightly, then store in an airtight container in the refrigerator for up to 5 days and reheat when ready to serve.
Just pop them into the microwave for 10-15 seconds when ready to eat!
Experiment with other fillings: bell peppers, mushrooms, broccoli… Try mozzarella in place of cheddar.
Overnight oats (no cooking)
No cooking or baking involved. Just stir together a few ingredients in a jar, place it in the fridge, and enjoy the next morning. That’s it!
Ingredients:
- 1/2 cup rolled oats
- 1/2 cup milk, dairy or dairy-free
- 1/4 – 1/2 cup Greek yogurt
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup
Instructions:
- Add all the ingredients to a jar or bowl with lid and stir to combine
- Refrigerate overnight
- In the morning, top with fruits, nuts, nut butter, seeds, granola, coconut, vanilla, spices, zest or any of your favorite toppings and enjoy!
